Inspired by the classic southern thai dish Hat Yai. fried chicken with a thin crunchy tempura layer. Often served with sriracha, our version is fried in smaller pieces and tossed in a glace inspired by the flavours of nam jim jaew. A classic dipping sauce made from toasted chilies, palm sugar, fish sauce and tamarind.
